Properties of Wheatgrass - 2007/07/08 08:05 1. Contains high quantities of healing and detoxifying chlorophyll
It is a cleanser and a complete food: the key ingredient, the element that aids your body in it’s healing and detoxification processes is CHLOROPHYLL. Wheatgrass juice contains up to 70% chlorophyll, which helps bring vital oxygen to cells and helps purify the blood.

i.Good Blood Builder: The chemical structure of chlorophyll is similar to that of hemin, the pigment which combines with protein to form hemoglobin. The chemical structure of chlorophyll and that of hemin differ in that chlorophyll contains magnesium as its central atom, whereas hemin contains iron as its central atom. It is this property that allows the body to convert chlorophyll to hemoglobin. Chlorophyll thereby becomes an excellent blood builder, purifier and cleanser.

ii.Helps fight infections: Chlorophyll has also been shown to be of value in helping the body fight infections,

iii.Balances acidity/alkalinity: Helps the body’s acidity/alkalinity balance to correct itself,

iv.Arrests growth of bacteria:
and by arresting the growth of unfriendly bacteria, chlorophyll assists the body in attaining it’s naturally vibrant state of health.

2. Rich nutritional value

But all grasses and green plants contain chlorophyll, so why wheatgrass? Wheatgrass has been selected from among chlorophyll-rich grasses and plants because of it’s nutritional value. Wheatgrass is considered a complete food. It is rich in:

i.Vitamins. Wheatgrass is particularly high in vitamins A, C and the B vitamins. Note, however that it is important that wheatgrass is consumed fresh (within a half hour of juicing is optimal). The vitamin content of any food diminishes with time.

ii.Minerals and trace elements. Wheatgrass contains more than 100 minerals and trace elements. Chief among them are calcium, phosphorus, magnesium, sodium, potassium, iron, sulphur, cobalt, and zinc.

iii.Enzymes. Enzymes are necessary for the proper digestion of food. Wheatgrass is not only rich in enzymes, but also stimulates the body’s own natural production of enzymes.

iv.Amino acids. Wheatgrass is high in usable protein. Amino acids are the proteins that can be used by the body, and wheatgrass contains all essential amino acids as well as many more. It is interesting to note that an essential amino acid is one that the body cannot manufacture by itself, but must be derived from the foods we eat.

3. Non Toxic & Multi-Purpose
In addition to being a valuable tool for the body’s self-healing, and being a complete food, wheatgrass is non-toxic. It can be used internally (Drinking, implants, douches) or topically (poultices) without fear of toxic side effects. Wheatgrass is therefore natural, detoxifying, nutritional and safe.

I am afraid that it is a cereal grass, so will not be safe from a gluten perspective:

Sorry about that.
